Sandvik 12C27 is probably the most common type of knife steel.
It can be sanded to be super sharp, is robust and has good resistance to rust.
The steel can be cured at between 58 and 61 HRC.
Must be cured at 1080 degrees Celcius and cooled in oil, can be quenched at 150-175 degrees celcius for 2x2 hours.
